He has won four bracelets and had sixteen money finishes over the course of his poker career between 1977 and 2010. His most notable win was at the 1978 World Series of Poker world championship event where he won $210,000 and became the youngest winner in the history of the tournament at the age of 28. Baldwin also won the Super Bowl of Poker tournaments in 1979, winning the $5000 Seven Card Stud event.
In addition to his poker career, Baldwin has worked as a consultant for the Golden Nugget Casino, became the President of that organization, and later served as the CFO of Mirage Resorts.
